AIP Pancakes

Ingredients
  

  • 3 Bananas
  • 1 C Cassava flour
  • 1/2 C Tigernut flour
  • 3/4 C Coconut milk Can be replaced with water
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp Apple cider vinegar
  • 1 tsp Unrefined sea salt
  • 1 tsp Baking soda
  • 2 tbsp coconut oil or olive oil for cooking

Method
 

  1. Mix all ingredients (except the oil for cooking) together well in by hand or in a Kitchen Aid.
  2. Put a tsp of oil in a pan over medium heat.
  3. When the oil is warm, spoon out about 2 tbsp of batter and shape with spoon into round pancake shape (the batter should not be liquid).
  4. Cook about 5 minutes per side (flip when edges are brown).
  5. Can finish in the oven (275 degrees Fahrenheit).
  6. Serve warm with maple syrup or AIP jam (St Dalfour jams have no sugar added in them and have only clean ingredients)
