AIP Pancakes

Prep Time 10 minutes
Cook Time 15 minutes

Ingredients
  

  • 3 Bananas
  • 1 C Cassava flour
  • 1/2 C Tigernut flour
  • 3/4 C Coconut milk Can be replaced with water
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp Apple cider vinegar
  • 1 tsp Unrefined sea salt
  • 1 tsp Baking soda
  • 2 tbsp coconut oil or olive oil for cooking

Instructions
 

  • Mix all ingredients (except the oil for cooking) together well in by hand or in a Kitchen Aid.
  • Put a tsp of oil in a pan over medium heat.
  • When the oil is warm, spoon out about 2 tbsp of batter and shape with spoon into round pancake shape (the batter should not be liquid).
  • Cook about 5 minutes per side (flip when edges are brown).
  • Can finish in the oven (275 degrees Fahrenheit).
  • Serve warm with maple syrup or AIP jam (St Dalfour jams have no sugar added in them and have only clean ingredients)
